sometimes I want to eat something hot and something cold and refreshing at the same time! But I do not want to make two total different dishes and spent an hour preparing them because lets be real: Nobody got time for that! This is a favorite for sure and I’m so happy that I can share it with you. Enjoy!
- 5 organic sweet potatoes
- 2 organic potatoes
- 200g Spinach
- 200g Kidney beans
- 6 cherry tomatoes
- 50g red cabbage
- 1 beetroot
- Spices: low salt tomato sauce, pepper/cayenne pepper
The 3 Steps:
- Preheat the oven on 200° C with circulating air. Wash sweet potatoes + cut organic potatoes and put them with the spices of your choice on a greaseproof paper and into the oven ( for 45 minutes- 1 hour)
- Wash spinach, rinse beans, tomatoes and red cabbage and throw it all together into a big bowl with the beetroot.
- After the potatoes are ready take one and add it to the salad. Drizzle tomato sauce over the salad cut the sweet potatoes ( for presentation) in half and your are done !
