today is all about Pasta because who does not like Pasta? For this dish I made the healthiest dish ever recipe with a little twist ( Under the recipes: The healthiest dish ever Vegan rustic Lunch or Dinner): The healthiest dish ever ), Vegan Pasta and homemade Pesto Rosso!
All you need is some time and the following ingredients:
Veggie Pan(FOR 1-2 PEOPLE AS A MAIN- AND 4 PEOPLE AS A SIDE DISH)
600g sweet potato
400g runner beans
300-400g kidney beans ( or any beans that you really like)
300g of tomatoes
100g of Arugula salad
2 cloves of garlic
salt + pepper
spicy tomato sauce ( the ones that are for pasta)
200 g of oven baked cherry tomatoes
100 g dried tomatoes
100 g cashew nuts
20 g peanuts
half of an onion ( small)
1 tsp olive oil
5 tsp almond milk
spices: garlic, pepper, cayenne pepper, salt
And for the Pasta you need some “Vegan Pasta” but you can also use the regular if you want to. Most Pasta is Vegan anyways. You can ask the people in the store or mostly there is a sign for it that its Vegan!
What you have to do:
- Make the Veggie Pan like it says in the recipe ( https://annadaftari.wordpress.com/2015/08/02/super-healthy-vegan-dinner-or-lunch-dish-or-side-perfect-for-your-digestion-and-the-next-dinner-party/ )
- Add all the ingredients for your pesto ( after baking the cherry tomatoes for about 10 minutes in the oven at 200 °C) in a blender and blend it until it is has a smooth texture. Add extra almond milk if necessary and add as much spice you like.
- Cook your Pasta for about 7 minutes. Add a little salt and after cooking a bit of margarine to prevent it from sticking together!
- Put your veggies on the one side of the bowl and your Pasta on the other side and drizzle your Pesto on top!
Done! I added some arugula in the middle for decoration but nice young spinach tastes amazing with that!
